"If Mrs and Mr Carsten are on the island in 1972, you can be sure that you will find the two at the Budersand Hotel. For two years the Monday afternoon has been booked for an action from the culinary calendar of the hotel's gastronomy. Then there is the BUDERSAND BOUILLABAISSE, more information on the HP. If it fits with the flood, we hike from our holiday home in Ramtum on the Watt side through Watt to Hörnum. The path along the watt or through the watt, depending on the water level, then ends along the golf course at the port and you can go directly to the terrace in the Budersand. Unfortunately it rained this Monday around the morning and the tables were all quite wet. So the service told us we could only eat in the bar. There were already reserved tables to talk around the Bouillabaisse Event. We weren't very excited. The bar is really appealing in a hurry and we have already spent nice evenings after entering the Kai 3, but the facility is not really suitable to feed comfortably there. We had noticed our sad faces, and because it was extinguished and the sun was ever clearer, we were asked to go outside after our order and asked us to choose a place. Thanks to the service team of Budersand Gastronomy! As always, feel welcome and take care! It then became this place with a direct view of the water that now appears again on the watt side of Sylt and the port entrance of Hörnum. The building is not really an eyewitness in my not professional eyes and a successful design, but both from the Kai 3 (behind the terrace) and from the terrace you look at the sea. It remains, the view from the building to the sea is better than the view from the sea to the building. What also applies to the third catering of Budersand is that Strönholt on the dune above the adjacent golf course. So we sat in the basket, the sun radiated on our legs and we looked at the sea. Order was made, a bottle of water was served and we waited for the Budersand version of the Marseille fish soup. First we were fed bread and butter. That was probably goods from the local baker, neat, but not anymore. A bit bad that you don't try to serve a really good baguette. That would be much better for the French soup. The service then served us the Bouillabaisse with the supplements. In Budersand comes on the hot plate of fish, the classic varieties, cooked with vegetables, bissfest, which already very deviates from the original. Classic, however, the supplements, on one side, a garlic-dried and roasted baguette. Like a roulette. Here the kitchen remains with the classic recipe. A steaming hot fish balloon is then poured into a saucer. Bouillon does not describe it enough. What draws the kitchen from fish carcass, vegetables and spices, there is a beer of the top class. You could also put an Obelix-dimensioned boiler out of this fund, I would empty it until the last drop! Together with the vegetables and the fish, it is of course just as good. Now bread and baguette are also used together with the roulette, because on such a soup I do not smell cheese or roulette at the edge of the dish, this procedure at the bougais pleasure I spare. Woman and I have sworn to eat this exceptionally good lunch! The offer actually includes a glass of wine, but we always change it to a bottle from the well-stocked wine card of Kai3, which can also be used in the Vinothek Bar. Last year we had a wine from the Burgundian winery Mikulski, see my last review of Kai 3 from 2020. We ordered him for soup. On the map and from last year was known the aligote from old vines with the vintage 2015. At some point I looked at the label more closely and experienced a nice surprise. The young gentleman, who served us the wine after a longer waiting period (but before the soup), explained this with the surrounding wine cellar. He had to look for the wine for longer. And he had a somewhat older bottle in his hands, but it was calculated at the same rate as the younger wine. Thank you. So I can come to Budersand at the end of our Monday-Mittag-Einkehr 2021. In the south of the island, Budersand Gastronomy sets the culinary hallmarks. And that in all things, both from kitchen performance and service. Always worth a return! "If my wife and I are on the island, we'd rather stay in the south of Sylt. In the north, in List we always like to enjoy a few oysters at Dittmeyer, with the middle of the island we cannot start so much. The South, which is, of course, Rantum, where we log and Hörnum. In recent years, Hörnum has made a really significant development to sophisticated gastronomy. In front of the Sylter Muschelbude in the harbour there is now a basin with impressive large blue living lobsters and a few large Norwegian royal crabs, the Budersand conglomerate stands for itself, in the Strönholt and in the Kai 3 we have also spent beautiful evenings this year. Like the obligatory Monday afternoon with a once again excellent Bouillabaisse. The former Breizh by Hapimag is now newly opened as a beach farm, our Borgfelder has already registered it. Also a wonderful place to return, kitchen will be tested once. But where I have never been with my wife, this is the bistro from the fish business Matthiesen in the middle of Hörnum, opposite the bakery Lund with its highly sought-after strawberry villages. In February we were at noon because it was so empty and had eaten a fish soup, the stay, as well as the soup we enjoyed very much. This visit gave us the idea of booking a table at night. Said, with a run of a few weeks, Ms. Matthiesen reserved me a table by mail at 6:00 in the Bistro. There is another round at 8:00 a.m., but as we wanted to come by bike from Rantum, the early round of the better appointment appeared. It was also not to be expected that we would stay there for dinner as long as in Kai 3. The KW 33 of the year 2022 spoiled Sylt with welding temperatures far over 25 degrees and an almost missing wind. This made cycling in general and also our evening trip to Hörnum to Matthiesen very pleasant. So we were relaxed at 6:00 in front of the store and the bistro. As always, a lot was going on and in the store. On the left you will find the bistro with narrowly placed two and four tables, on the right side of the shop counter with the offer of the fish trade. In addition to guests and customers, the Take Away business also flourished and several customers took up their warm dishes. A young lady took us at the reception and on our name we found our table fast. We took place and the young lady gave us the cards. You're on the HP. The lining in the counter area of the shop allows each connoisseur to sneak with the tongue. From fresh fish to smoked goods to fish and seafood salads and preparations there was much to discover. Because so we asked the young lady if it was possible to put together a selection as an appetizer. No problem was the answer! Great, then a Buddel Flens as a drink. Ordinary wines are also available, but in the evening we had the feeling of beer. Woman went to the counter to make her choice that I would join (must). In contrast, she expected the young lady with a large plate and from the distance could already see how difficult it was for my dearest to meet a selection that would not blow the frame. At the end this plate came to our table. River Cancer Cocktail was on it, red hering salad, shrimp in oil, pebbles and wakame salad, but only for me, as a surprise, my wife finds the incredible. I love this algae preparation. Our young wife came back and brought a little bread. There are not so many appetizers in the solid card, but on the counter you can put together a beautiful appetizer after its gusto. We were very happy with our appetizer and had time to eat. Oysters had already eaten list, so they weren't there. With the second bottle of Flens then our main dishes. If you look at the choice of my wife, you can also see why there were no crabs on the appetizer board. Crabs loves her about everything, I had already wondered, but now that's cleared. North Sea Cancers with two fried eggs and roasted potatoes wanted to be the main food. My wife would not be my wife if the BK had not been replaced by a lukewarm potato salad. That was not a problem and a good idea, because it was really delicious! With a bottle of 2 from the river we met, even I had my main dish standing in front of me. Fresh herbs, roasted with potato salad, my order was for you kitchen. Somewhere I said, I love hering! After the acidic intarsia braid on Sunday evening, the green version, fresh and crispy roasted. We have a potato salad, homemade, with mayonnaise. I'm a North German socialist and sometimes I have to. If you eat my Swabian wife, he will not be accepted, because the part of my family is Mayo in Salat Haram! So I enjoyed great fish and delicious salad. We were tired after that, more did not go, except to give the kitchen a great praise. The service in the form of Mrs Matthiesen and her young colleague, who has always taken time for her guests despite the great hecticism and hecticism in the shop, could not be burdened and maintained with joy and affection! Do not go better and have been rewarded with a reasonable tip! To complete our first dinner in the bistro of fish Matthiesen in Hörnum. My expectations have been exceeded! And that actually says everything. I had expected a good fish kitchen, but not a carefree team (kitchen and service) in the Bistro. That was funny, good cost, and we're coming back!"
