Although they sell the most ridiculously large burgers I have ever seen in my life, ALL the patties are 4oz (120g dry as a bone shoe soles stacked a mile high. They don 't ask for temps on the meat, don 't seem to care if you ask for a temp , and couldn 't actually execute a solid temp because of the shape of their thin patties. I had the wagyu it was a crime I suspect the moose burger would just be a pile of dust. My suggestion, get rid of the kangaroo and crocodile and all the overthinking in sides and condiments and focus on how to actually make a burger especially at 40+ bucks a burger ... (easy suggestion ... if somenoe wants a 2lb burger give them a 2lb patty ... not a stack of overcoo...
