The best kosher option for us while traveling in Scotland is to pre-order our meals from Chabad, have them frozen, and pick them up in Glasgow. On this trip, we spent £300 on two weeks' worth of food, enough for four adults. Our selection included soups, kugels, chicken, beef, strudel, vegetables, rice, and lasagna. To make it work, we purchased a 220V crockpot and a power converter for our electric hot plate. We also brought along our own plastic plates, utensils, pot, pan, and thermos, which is great for taking soups on day trips away from our Airbnb.
