Answer: because it 's French and it 's in France or rather, it 's in an area of France with only a very tiny proportion of people of North African descent and the French are still convinced that theirs is the only cuisine is worth eating. The upshot is that they have cut themselves off from a vast range of wonderful flavours and cuisines, they 've had no practice at handling any food that 's the least bit spicey/hot and when they run a Moroccan restaurant, everything is as bland and uninteresting as possible. Welcome to Escale au Maroc... Yes, the very large interior of this all you can eat buffet place is beautifully decorated with North African wall hangings, door frames, cushions and so on, and prices are very reasonable if you intend to eat a great deal but the food! It isn 't even just that all the heat is missing from dishes that should rejoice in it: they haven 't even put fresh coriander in with the couscous. When our waitress was asked why it 's all so flavour free, she said well you can add harisa but what 's needed, what 's used in authentic Moroccan cooking are skilled, balanced combinations IN the cooking: not just one item slapped on afterwards as crude remedial work. We were trying this place out in hope of taking other people here who would find it a pleasant change from the usual traditional Gascon food, including a wider than usual choice for vegetarians. We shan 't be taking them now, or going again ourselves.

This restaurant doesn't look like much from the outside. Located in the industrial part of town, it looks like an warehouse. When you go through the doors, everything changes! The inside walls( and they are enormously high) have been covered with beautiful fabric. The tables are color coordinated in jewel tones with soft cushions and pillows on the banquettes. You feel like you are in Morocco. The food, which happens to be a buffet, is hot and fresh and elegantly displayed. There are so many choices you will have a hard time choosing. All delicious and hot. The price is so affordable, it's hard to believe. I went back again.

Called by for their Lunchtime Menu and had a pleasant meal. The surroundings were comfortable and clean, the service friendly and prompt including speaking english, and the prices fair and reasonable. Whilst there was adequate vegetarian dishes, the 'meat ' ones were less extensive and as such didn 't really fit my usual food choices. That 's not to say it wasn 't a good lunch, especially as one of our party was a vegetarian and very happy. All in all a good place to take vegetarians and occasional meat eaters.
