fiona and joe belonged to the first people who put me in charge for photography, in which we were the first customers, when levanter opened in mai for the first time. (I can't believe it's been a year ago). as they took a much deserved break in san sebastián, I suggested a few places to try it from which a bar nestor is in the old town. it is a unique small bar, they must set themselves at a certain time (7.15) and put their names on the list. there are two lists, one for steak and the other tortilla. there is also a tomato salad. that's it! what do they give a dame that has just spent the last week in some of the most royal infirmary, 1kg of first-class steak of an 8 year old galician dairy cow, of course. levanter has been on our radar for some time when I had pinched for something like the joys of donostia, but if they announced in the juni, they would store the above mentioned bark (from which I tried on my previous san sebastian journey) on an first-come-first-serve basis on the top of the must-Viit list.

garroxta – that was my favorite of cooked dishes. Cheese and beet root are always happy bettellows, but by baking the nuts of the cheese were reinforced, made for a particularly magnificent synergy with the sweet, earthy beet root pee.

my favourite dish was “Atun a la Plancha”. a stunning piece perfectly seared tuna served simply with a beaten salsa verde.
