About 12 years ago I used to buy unprepared masa (no lard or salt) for tamales here. It was one of the few places where you could find quality tamal masa, freshly ground, that you could mix with lard and broth and salt to your liking. Last time I went I ended up throwing away the masa. It was so YELLOW and had such a strong taste of Cal. Clearly, they hadn 't rinsed the nixtamalized corn. As it 's become so difficult to find quality fresh ground tamal masa in stores, I 've begun nixtamalizing corn and making the masa myself not a difficult process.
