Pizzeria Bros (west Island)

Wow. What a surprise. I was a little worried when I walked in because it looked like a fast food joint, but the only thing my experience here had in common with a fast food joint was that it was FAST! (ok and the plastic tray). I had the Prosciutto Crudo. It could be one of the best pizzas I have ever eaten. Everything from the dough, to the mixture of flavors and textures, to the quantity of each ingredient, to the doneness. Can't wait to try them all (without olives). The cannoli for dessert was amazing, too. Great bonus. They offered me a choice of a bag of chips or a cannoli to make a trio (that also felt fast food joint-ish)... get rid of the chips! I feel like I've reviewed this restaurant before, as I have been coming here for over 4 years now and each visit is always delightful. While it may be a bit on the expensive side, the flavor is unbeatable. Their pizzas are cooked in just 90 seconds but the end result is a feast for your taste buds. They offer a variety of signature pizzas or you can create your own. My favorite has always been The Diabolo, which unfortunately was recently taken off the menu. Thankfully, with the help of a former chef, we were able to recreate it with tomato sauce, cheese, mushrooms, bell peppers, Calabrese sausage, and the essential garlic oil. The taste of the pizza was absolutely amazing, each slice bursting with flavor and cooked to perfection. I was thoroughly impressed and can confidently say that I will be a returning customer. what a great refreshing pizzeria joint on the west island. first place I can have a nicely cooked wood stove pizza with a thin crust that takes about two minutes. jeremy has joined pizzas with prosciutto and arugula for us. one played for the children. it took two minutes and he will be my pizzeria in the future. Good vegan pizza. Slightly pricey and weird rules for mixing ingredients. Only aloud to the swap 1 ingredient with a different one. There must be a simpler way or maybe I just wasn't offered it.
