De Lauzan porte la cuisine française moderne à un nouveau sommet. L'équilibre des saveurs et des textures de chaque plat était exceptionnel, et le menu découverte que nous avons choisi n'était que cela : un voyage dans une cuisine créative et sensible, où chaque plat rassemblait des éléments qui se complétaient et se valorisaient. Il est difficile de trouver les mots justes sans paraître prétentieux, alors tout ce que je peux dire, c'est... goûtez par vous-même. Tis restaurant is situated right in the centre of Gignac so not difficult to find. Went on a very hot day so the absence of a shady terrace was disappointing.The service s very slow and not well coordinated - we had to wait the best part of 20 minutes before we could get a drink.It is expensive but at lunch time there is a 31 euro 'formule' which offers two courses (entrée and main course or main course and dessert) which we chose.Having been given some amuse bouche which were tasty, we started with a roulade of goat's cheese with courgette (there was no choice) which was beautifully made with an interesting combination of flavours. Looking for new gastronomic experiences around Montpellier, I have been fully delighted by this excellent address I was longing for since years. In addition to lie in one of my favorite places in terms of wines and landscapes in Hérault province, this restaurant provided all I love about gastronomy: local products and cuisine (in 4 to 6 steps) balancing artistically oz of creativity and expression of taste in its pure form. I’ve always admired Matthieu’s food but occasionally felt that it was trying just a little too hard – overcomplicating the presentation or sometimes simply putting one too many ingredients on the plate. Now his fertile imagination and invention seem to have calmed down and found a real maturity. The service and the pace at which food leaves the kitchen have also moved up a notch. There was often a definite – sometimes bordering on tedious - lull between main course and dessert, almost as if early tables couldn’t get pud until late tables had their starters. The step inland to Gignac makes this very definitely provincial France rather than the chic and cosmopolitan coast, but the cooking at Du Lauzun is anything but unsophisticated. Well though out combinations of flavor are combined in beautifully constructed plates that please the eyes and the palate. The service is good and the décor simple. Nothing detracts from the food. That includes the price. It is excellent value for a restaurant that richly deserves its Michelin star. The two-course lunch menu came to only around 30 euros.

De Lauzun is a must visit if you are within 25k of Gignac in LanguedocIt is a wonderful small restaurant serving top quality food worthy of Michelin ratingsFour of us lunched and enjoyed the 'set menu' after Champagne together with a wonderful red - Les Calcinaires GaubyThe total bill was just under 200 Euro !. Service was excellent and the staff most attentiveThis was one of our best meals during a two week holiday in France including Paris

Perfect service, excellent wine list. One star Michelin quality food, somewhat obscured by "over spicing." The chef (very nice and charming) explained the this grandmother lived in Morocco, and that he was using that as an inspiration, I think too much so. I am unhappy when the multitude of flavors obscure the flavor of the excellent meats, fish and vegetables.

This wonderful taster meal with wine was booked by our fantastic children for our 40th Wedding anniversary and what a special occasion it was, food ,service and attention to detail was second to none. Réservez une table maintenant
