Imaginative sparkling seven course dinner by brilliant young chef in this classic hotel.After canapés in the bar and an amuse bouche at the table our menu started with a fresh and light variation on courgettes with a lemon sabayon then oysters, girolles ravioli, two ways with beef "like my father liked it", the first cooked at the table by the chef and the second a surprise. Followed by sweetbreads or lobster and then cheese The Stichelton! Pre desert and then desert an amazing concoction using a courgette flower stuffed with a mouse with al dente cooked rhubarb. This must have been the best desert I have had in years!As part of our hotel overnight dinner B&B package (see my separate review) we had a set gourmet menu. Expensive but lovely bottle of mersault (white as you would expect) and interestingly two glasses of red mersault. One Michelin star currently but with food like this, this young ambitious chef who has only been here for a few years must be on way to a second star. All that's needed is for a revamp of the rather dated decor which should create a little more atmosphere. Maitre d' previously at The Square in Bruton Street, Mayfair, London was very helpful, as we all staff friendly and knowledgeable.As we left the dining room the chef and maitre d' were there with a signed menu and Madelaine's to take away
