In June I brought a group of Australians to La Ciboulette for lunch, as we were en route to Spain, and Foix was a perfect place to make a break. What I didn't realize months before when I was negotiating a menu with co-owner Inga, was what an absolutely perfect place La Ciboulette would turn out to be for a meal. The restaurant is a little gem, situated in a secluded valley and flanked by a rushing stream about 3 km from Foix centre. There were 30 people in our group and we had pre-ordered from a menu designed to give our group a taste of the local Ariègeois cuisine, which included Cassoulet and wild mushroom risotto with warm goats cheese. I have eaten many cassoulets before in quite upmarket restaurants in towns like Carcasonne, but without doubt this was the best. Not overcooked with a consistency resembling porridge, but each bean separated from the other in the most superbly flavoured cooking juices and accompanied by fine local sausages and confit. The cooking of the risotto had the same careful attention to 'just right' and a depth of flavour that only comes with wild mushrooms. Our meals were served with rapidity as we still had the Pyrenees to cross, but also with much humour and banter, making for a relaxing and friendly atmosphere. However I have left the most extraordinary part to last and that was the price of this excellent 2 course lunch with a glass of wine. 13 euros! Thank you Inga
