Really nice Decor, and bar area with a lot of TV's available to view your favorite sports event. The fresh and warm chips and salsa are really good, the creamy avocado dip is light and smooth. They can and will accommodate for large parties with an 18% gratuity added to parties of 6 or more. The drink menu is nice, food menu as well, good luck making a selection, but as far as I can tell...and smell...it's all good! Beware that the happy hour menu is only available when sitting at the bar. I was not allowed to try the menu while sitting at a table. Group of 9 people stopped in for lunch. The parking is ample and it was not crowded. Complimentary chips and salsa are served warm (tasty! and adult beverages are available. Margaritas were good. They have a large menu and offer a daily weekday luncheon special. Off the regular menu I had the Dos Amigos plate..which is 2 cheese enchiladas, rice and beans. Others had the Chicken enchilada plate, and the Chili Relleno plate. Food was good but not exceptional. Prices are reasonable, as well. The problem is that the service was poor. I have visited Don Carlos a few times in the past, like 7 years ago. I came back a couple of weeks and found out it wasn't anything special, just like in the past. Their prices seem to haves jumped up, and they took forever to bring our food out, the server was attentive but kept apologizing for the food not coming out. Our family parrillada didn't taste all that good, tastes like it was cooked with burnt oil, their hot sauce is not spicy at all. It will probably take me another 7 years to give this place a try again.
Here's the short version. They have GREAT service. My date and I kept a table occupied way later than we should've and our server remained gracious and accomodating throughout the evening. The menu has a huge variety that runs the gamut from Tex-Mex classics to seafood to a wide variety of grilled offerings. The food is pretty much standard Tex-Mex, but I'd note that the beef with my fajita enchiladas was excellent. If I am back in the Waco area, I'll be back to try the fajita options.

although it seems prices have increased, the current states of affairs is the real culprit in this regard. the food is ALWAYS worth the price, and selection is many. the appetizer was bacon wrapped stuffed jalapeno, omg to die for. i thought i would eat small and ordered the Tostada's De Mexicano. I was so mistaken. a lot of great food comes on your plate. so so my delicious..
My family love's to eat their on special occasions, the last occasion was mom birthday, we sat out on the patio ,with all the grand,and great grand kid's, ate and listened to a live band,and kid's took turns dancing with granny.
It was okay but the food was rather undesirable. the service was great nice faces and the food was fast paying was fast, but the food did not sit right it may just be me but it was kinda nasty and weird for my liking.
The chicken fajita chimichanga was delish!! The salsa was just the right heat and the chips were great. The meat on the brisket nachos tasted off somehow so won’t order those again. A little pricey.

One of my favorite restaurants. The food is reasonable price. I love the early Happy Hour. The staff is always nice.
