Kneading Ruby is a funky café and pizza bar in an unbelievable ally in the centre of Wollongong. We had an early booking at 5 p.m. and arrived at about 10 minutes early for our session. We were mistakenly going to the only open door at the building that proved to be a seperate bar. We were redirected to the right entrance, which was closed until 5:00. Not sure we should open the doors, but there were also some other diners out there. This was not a problem, but maybe open the doors 5min before the session would be nice. We were greeted by a super friendly maître d who showed our party from three to a table at the far end of the dining room. A beautiful place that remained quickly filled to capacity as the dining room. The decor is well thought out and the mood and atmosphere are uplifted and relaxed. The only advice I had before from friends is that the venue is quite loud. I found that true, but not at the point of bringing about our meal or comfort. Once our waitress started. A huge shrine to Paris that cared for us all night. She could not have been more friendly or knowledgeable about the menu and the dishes. As a group of three we were unable to choose the work menus, but Paris was able to cure a similar selection of dishes for us that was perfect for our first visit. Paris is a perfect example of how a good customer service costs a business, but gives so much value to a culinary experience! A round of drinks was quickly served with a lemon cocktail, the place for the lady in our group and the Gents enjoy the tap beer on site from Mittagong. It followed a short time later, consisting of fresh oysters and beef tars. The oysters come from Merimbula and are served fresh or with a cirrus yellow. Both variants delicious and we swallowed half a dozen fast! The tartars were served on a gnocco fritto, which is an Italian bread with flour, water and lard. The beef was fresh and well seasoned, but the frit might not work entirely with this dish. Traditionally, the frit is served with a bold pairing such as cheese or salami. The tartaric acid is very subtle and the frit very dense, which felt slightly failed. Very tasty and a great start to dinner. Besides the arrival at the table were Polnta chips, grilled octopus and a rocket salad. The Polnta chips were perfectly cooked. A crisp outer shell with a smooth and creamy center. The Gorgonzola sauce is always a great game for this dish but this time I felt it was missing from this blue cheese bite. The grilled octopus was perfectly cooked. Tender and the Nduja sauce had a real kick. Nduja is a pig and chili past and was a great pairing with the octopus. The rocket salad is a testament to how simple, high quality products make the best food. A simple salad with a beautiful lemon dressing and bold parmesan; delicious! The last round of dishes consisted of super comfort favorites from Cavatelli, rosted zucchini and market fishing. The iceless Semolina cavatelli Pasta was boiled al dente and had a simple but tasty pesto sauce. The Bratzucchini was well prepared with a chicken and tasty chili, sunflower seed and Ricotta salata. The outstanding court was the market fish. The Barramundi fillet was equipped with a crispy skin that softened the cured butter and covered a delicate and refined fillet of juicy meat! That's a dish I'll enjoy again and again! In this phase, our group was completely barked and satisfied, but we decided to share the pavlova dessert. Compared to the rest of our meal, it was easy to lustrate and not very refined, but I do not appreciate an Italian restaurant Signature dish so no hard feelings there. Finally, Kneading Ruby has all the elements to a great culinary experience. Enjoyable atmosphere, excellent customer service, delicious fresh food and everything at a reasonable price. A must try!!
