On the bright side, our dinner waitress was absolutely wonderful! She was a lovely girl with reddish hair and glasses, though I didn't catch her name. She was not only friendly but also very professional. She even managed to get us a few complimentary entrance tickets to the back room to compensate for our long wait, which we truly appreciated.
Once we were seated, the night improved significantly, except for one issue with the bartending service. With a group of eight and various cocktail orders, it proved to be a bit challenging. The food was authentic latin food. I felt like grandma was cooking. The seasoning of the mofongo of carne vieja was delicious. The passion fruit mojito with the lemon popsicle was refreshing. Service was outstanding. I didn’t feel rush to finish my food. The ambience was happy and the salsa orchestra with latin dancing was so much fun. This place has amazing music that rotates nightly. The atmosphere is great. The dishes are more like tapas and not main courses. I had what I thought was going to be an entree of chicken but it was a very small piece with alittle side salad. As most places now prices are higher. You’ll need to order a few plates for dinner. The service was perfect and the jazz pickup band phenomenal.
We are always impressed when we visit La Fabrica Central. The food, service, drinks, and atmosphere consistently exceed our expectations! We keep returning and enjoy introducing new friends and neighbors to this wonderful place.

When the music is playing, it's hard to have a conversation, but aside from that, it's fairly quiet. The food is authentic and generous. Overall, it was a delightful evening.
Love music too loud for any conversation, starting at 6:30. It ruined an otherwise excellent evening. Maybe have some nights when you start the music at 7:30 or 8?
Such great music! Ernesto Diaz, Gonzalo Grau, Alex Alvear and crew are so talented. And they really know how to light up a crowd and get everyone dancing.
The food and service were amazing as usual. Our friend was impressed, and we were treated very well as usual.
