It's been a very long time since I've experienced such joy visiting a Sydney restaurant. Anyone who is anyone has to experience the delight that is Hubert. It's like magic! From the minute I started descending the stairs I felt like I was transported to a different place and time .. one I liked very very much. The welcome was as warm as the beautiful ambiance of the dining room which was adorned with all manner of tasteful paraphernalia.Dark woods , old fashioned real wax tall candles flickering flirtatiously creating a sensual mood.Discreet French ballads playing in the background. A Warm , discreetly lit dining room hushed yet with a sense of festivity . I started with a Perfectly balanced extra dry gin martini ( you would be surprised how easy it is to get these wrong). The service from arrival to the sad final good bye was simply en pointe. I felt very very special and well cared for . Guided perfectly on the wine and food selection .. the recommendations were flawless. Mel our waitress was simply lovely and a completely professional , knowledgable and efficient young lady- an absolute gem. ( thank you darling girl!) Ahhhh .. I suppose I should mention the food ; EXQUISITE!!!Never quite a fan of French food - I have this perception that its way too fussy and complicated .. HOW WRONG AM I WHEN IT COMES TO HUBERT.The steak tartare with frites was lovely and light and beautifully seasoned , the escargots in an xo sauce were delicious , the blue eye cod in paper was cooked perfectly , fresh , plump and immersed in the most delicious light buttery sauce that simply created a perfect balance . The German Pinot Gris that was recommended simply danced perfectly with the food selection. There was freshly baked crispy bread provided to mop up the various light and luscious sauces. There was nothing at all I could fault about any aspect of this most wonderful dining experience .If you are ever feeling the need for a little escape from the mundane and can't quite fit in a trip to Paris , I'd suggest you book yourself in to the very popular Hubert ( perhaps an indulgent long lunch which will more likely take a last minute booking - if you're lucky) and in the blink of an eye ( way to quick in my opinion) you can transport yourself to Paris for a virtual experience of a lifetime .Just do it . Life is way too short !Ps . Did I mention how reasonable the price was? Bravo Hubert for making your price point so accessible ! I will be back again and again and again! Thank you !

I never cared much for French cooking before - growing up in Australia I've felt French Food is sufficiently remote that it's just not something our palette warms to (whereas numerous Asian variants hit the spot, as evidenced by a quick scan of the restaurants in our cities).A visit to Hubert's was therefore a bit of a revelation. Their spin on French fare is exciting, and I was quickly won over. From the bread and butter onward, every dish we tried was outstanding - and the quality of the food was matched by smooth and professional service from waiting and wine staff.Although French, an amazing Kim-Chi dish talks to the "spin" I mentioned. A Korean staple with a French twist, that's Sydney cooking flair - and I'm a fan. What a great venue too. Atmosphere and ambiance in abundance. Just as with the Baxter Inn, the attention to decor and fittings is picture-perfect.Hubert felt like a breath of fresh air for Sydney dining, I'm looking forward to my next visit.

Hubert roast chicken. Its so good !!! Its like the head chef personally give them goodnight kisses and tuck their blankets one by one before they go into the oven. The chicken + pommes anna + kimchi gratin = the best combo ever. Will come back and recommend to friends. This restaurant the more party you have the more merrier.

Went here with business colleagues. Food and service excellent, atmosphere of the venue something different. Restaurant was very full and it was Monday night. Price is expensive but good for something special.
