Wow what a disappointment! As a Texas resident and huge fan from the one time we visited the Dallas restaurant I was excited to find a location in Carlsbad and introduce my family to the wonders of Texas de Brazil. Sadly it started poorly when the hostess refused to seat the 6 of us even after I told her my sister and nephew would be joining us in about 30 minutes. After contemplating a venue change she got her manager’s approval to accommodate us. So we sat and our waiter introduced himself and we asked for water. And then he disappeared for a while, brought us water, then disappeared. After about 15-20 minutes of sitting there I got up and went looking for him to ask if anyone was going to...
Diners included myself, my wife, and my mother-in-law. My wife and mother-in-law selected the salad option, forgoing the meat. Both of them truly enjoyed their salads and were pleased there was so much to choose from. Texas de Brazil definitely has one of the best salad bars around. I had the meat option, and tried a variety of their meats. I have to say that all were good (except for those two pieces of sirloin I got that had gristle but none spectacular. My favorite was the filet but I have had better filets. As for value, I don 't think it 's worth it. The salad option costs a whopping $32, which is crazy, especially since there are steakhouses that sell steak dinners for less than that!...
The environment is very noisy and crowded. Our waiter asked what temp meat we like, we said Medium rare. He guaranteed this. Our first round of both leg of lamb and filet steaks were medium and too well done for our preference. The special was shrimp which never came until the end of our meal when we complained and one skewer was brought around the room. Waiter said it was not spicy, but it was way too peppery. Not a great experience this time.
The restaurant review stated that some of the meat was tough and fatty. Additionally, the hot items at the salad bar were empty, and one of the soups was cold. The reviewer felt that they did not get good value for the price paid and believed they could have had a much better meal for the same amount of money.

We had a fantastic dining experience at this restaurant. The food was delicious and expertly prepared, allowing us to try a bit of everything. Our server was friendly, but not very attentive.
We are regular customers and always enjoy Texas de Brazil. The salad bar is always wonderful and meats are nicely seasoned and broiled nicely rare.
The service was fantastic, but the meat quality was lacking. A significant portion of the beef was too tough and lacked flavor.
My experience was amazing for first time my waitresses were awesome and the gentlemen serving the meat was as well
