The porchetta appetizer was thinly sliced and packed with flavor, with a caramel-colored ribbon of seared lardo along the edge. It was accompanied by delicately fried zucchini flowers that were light, not greasy, and filled with just the right amount of mozzarella. The arugula salad was topped with thin slices of fresh pear, drizzled with balsamic glaze, and sprinkled with fresh gorgonzola cheese.
