Restaurant Bar Sushi Sogen

We were 7 people on a Tuesday night and had a reservation for 6:30. They were quite busy for a Tuesday so they were clearly understaffed. To be honest the dining room is way too big for 4 sushi chefs to fulfill all orders timely. We filled in our sushi sheet and no one came to take it for at least 15 minutes. We just sat there and waited trying to flag someone down. Our appetizers came 30 minutes later and we waited and waited for our sushi order. By the time it arrived at 8:35, we had lost our appetite and barely finished our food. The waitress didn't even attempt to apologize or make excuses. Fusion Japanese food. Taste is good. Plating is excellent. Service is good.Here are what I tried: 9 pieces sashimi plate. Taste ok but underwhelming especially the selection of fish the specialty maki (Kanji Supaishi). Interesting especially the no rice soy wrap maki. But I don't understand the purpose of the sliced strawberry. Its taste does not go with the Maki and decoration wise it is like of out of place imo. sweet shrimp sashimi, a bit disappointing. The menu says sashimi has 3 pieces but I only got 2. Also I cannot taste the ocean umami sweetness. the suicide hamachi maki. The menu says it is spicy but there is absolutely not spicy.

Too bad the Owner/Manager could not be of good service in this situation:Found a WORM in our sushi. He put it as it’s not their fault, it came from the bag of lettuce… I dont care, it came from my sushi.I returned the plate and lost appetite. He offered a desert but I don’t eat desert so I ask if he could remove the wine bottle. He did not want to give the 40$ bottle and gave 20$ off the bill. The service was fantastic. Great experience all around. Everything we tried was delicious. I loved the tastes and different textures. I will definitely go back.
