Unexpected delicious fusion food. These noodles are as if dan dan noodles were a carbonara, seasoned for a milder Japanese taste and then topped like ramen yet served with a thicker udon noodle. Was much more filling than I expected and leftover heated up better than I imagined. The karage, croquettes, and matcha tea were also very good. The karage is crispy and well seasoned, the croquettes are creamy and perfectly coated, the matcha latte is thick and rich. In my view, the deluxe bowl had an excess of protein, thanks to the richness of the sauce and the egg yolk—which included a poached egg, a soft-boiled egg, char siu pork, and Taiwanese meat sauce. I personally preferred the original version, which only has the poached egg and meat sauce. Additionally, I think adding vinegar is crucial to balance the rich flavors; without it, the dish can come across as a bit one-dimensional. Overall, I had a fantastic dining experience!
Amazing ramen! The noodles have the ideal combination of tenderness and chewiness. The broth is rich, bursting with complex flavors and aromas, and the fish powder contributes a wonderful umami flavor. It's delicious on its own, but when you add vinegar, it elevates the dish to a whole new (and equally delicious) level! The serving size is generous and leaves me fully satisfied.

Great ramen! Ramen has a good balance of softenes and chewyness. The sauce has so many layers of flavors and aromas, the fish powder gives it a nice umami taste. On its on is delicious, then addition of vinegar gives the ramen a whole different (yummy)taste! Original is more than enough to fill me up.
